Chicken drumsticks and wings are definitely one of my childhood favorites. Whether it’s deep fried, grilled, baked, or soy poached, they’re a regular on our dining table.
There were days where my brother and I would beg and beg our parents to bring us to KFCs on the weekends. For once when they do decide to bring us there, we would celebrate with this most embarrassing ever chicken dance. Haha~ Then, we’d race each other in stuffing our faces with chicken and lick off our fingers off satisfied. Good times ๐
There’s just something about drumsticks and wings. They’re such simple food, yet sooo satisfying to eat!

Super easy.

This recipe is so simple that anyone can make this, really. Anyone. All you need to do:
Mix drumsticks with baking powder and kosher salt.
Rest in fridge (overnight for extra crispiness).
Bake in the oven.
Toss with garlic mayonnaise sauce.
EAT!

- 8 chicken drumsticks
- 1 tablespoon baking powder
- ยฝ tablespoon kosher salt
- 2 teaspoons ketchup
- 3 tablespoons Japanese mayonnaise
- 2 teaspoons honey
- 1 teaspoon garlic powder
- Put the chicken drumsticks in a large mixing bowl and mix well with baking powder and kosher salt.
- Rest the drumsticks in fridge for at least 1 hour (recommend 8 hours). The longer you rest, the crispier the skin will become as the baking powder will have more time to do the magic.
- Preheat oven to 450F.
- Put the chicken drumsticks onto a rack and into oven for 55 minutes to 1 hour. Flip the drumsticks once every 20 minutes.
- In a large mixing bowl, mix all the garlic mayo sauce ingredients together.
- Remove the drumsticks from oven and ensure the internal temperature is 165F.
- Toss the drumsticks with the garlic mayo sauce in a large mixing bowl while the drumsticks are still piping hot.
- Serve Immediately.

I tried these tonight and I really wanted them to come out like yours, but they didn’t. I left them overnight in the fridge, followed the recipe just as you wrote it and they didn’t come out good at all. I’m an experienced food blogger, so I know what I’m doing but my chicken never really crisped up. I had to put them under the broiler because they were too goopy. I don’t know what happened??

These two could have been the possibility explanations:
The baking powder was too old and not reactive anymore. To test this, add 1/4 tsp of baking powder into tap water. If It bubbles up, it is still good.
Used baking soda instead of baking powder. It happened to one of our readers and the result was very similar to your goopy description.

How was it with the regular mayo? I don’t know where I would find the mayo in this recipe.

Hi Dani, thank you for your question.
You can add 2 Tbsp rice vinegar and 1 Tbsp sugar to 1 cup of regular mayo to substitute with Japanese mayo.

When you put the baking powder on the chicken pans let it rest in the fridge, do you leave it covered or uncovered? Could I coat them and leave me in a ziplock bag?

I just made this tonight and it was excellent. I was sceptical about the baking powder, but it truly made the chicken skin bubble up and crisp it to perfection. I added additional seasoning to the powder mix like: pepper, smoked paprika, onion powder, cayenne and a pinch of Lawrys.
I did not toss chicken in the mayo afterwards because I was craving fried chicken. Iinstead served yummy mayo sauce on the side. I will try coating it next time. This recipe is a keeper!

We’re so glad you enjoyed it!!! This is one of our fav quick go-to recipes. Oh and those additional seasonings you’ve added sound really delicious! ๐
This works because the baking powder draws moisture out of the chicken skin to make it crispy. You should try coating baking powder with chicken wings too. I think you’re gonna love it. So for other meat such as pork chops or fish filet, a better way to make it crispy is to use flour with egg wash and Panko bread crumbs.

Yep! You can use regular mayonnaise, just add additional honey to the mix.
Use 3 tablespoons of regular mayo + 1 teaspoon honey to replace the 3 tablespoons of Japanese mayonnaise.

No bitter aftertaste if you use one tablespoon of baking powder.
Make sure to use baking powder not baking soda. I am pretty sure baking soda will give you a bitter aftertaste!!
