Easy Roasted Asparagus with Parmesan Recipe Tips
Have you ever noticed that if you’ve been storing your fresh asparagus in the fridge for a few days, they would start wilting, becomes soft, wrinkly, and all dried up? Asparagus are more perishable than many other vegetables as they lose water quickly. So, when you select the asparagus, have a smell at the ends, and look for firm green stalks.
Asparagus are best to be consumed within 2 days after purchase (plus, you don’t know how long they’ve been sitting on the shelf).
To keep the asparagus fresh in the fridge, treat it like a bouquet of flowers and wrap the ends with a damp towel. It’ll slow down the wilting.
Prior to roasting the asparagus in the oven, remember to cut or snap off the woody base of the stalks. These tough parts has much less moisture.
Since you may have a different preference for how crunchy you want your asparagus to be, adjust the oven roasting time, keeping the thickness of the asparagus stalks into considerations. Increase the roasting time for more tenderness or decrease the roasting cooking time if you desire more crunchiness.

- 500 grams asparagus
- 2 tablespoon extra virgin olive oil, to drizzle
- 2 cloves garlic, minced
- Β½ cup parmesan cheese, freshly grated
- Kosher salt or sea salt
- Black pepper
- Preheat oven to 425F.
- Evenly coat asparagus with extra virgin olive oil, garlic, and a pinch of black pepper.
- Spread asparagus onto a single layer of baking sheet on top of a baking tray.
- Season with 1 Β½ pinch of kosher salt and freshly grated parmesan cheese.
- Bake in the oven for 15 to 20 minutes until tender or crunchy depending on your preference.
- Enjoy!
Adjust the oven roasting time according to the thickness of the asparagus stalks and how crunchy you want them to be. Increase cooking time for more tenderness and decrease cooking time for more crunchiness.
