Black beans are known as one of the world’s healthiest foods. So, what are we going to cook with it? Bacon. Yep. BACON! Who would have known that the flavors from bacon actually matches well with black beans?
Black beans taste wonderful and we really enjoy them. Sadly, they rarely get to our dining table.
Usually, black bean recipes require a 12-hour overnight soak on top of hours of simmering to tender the beans. When this come to mind, we’ll just forget it and cook something else. 😉
It was until we got our Instant Pot electric pressure cooker, that we finally dug out our lonely bag of dried black beans!
This black beans recipe, adapted from Serious Eats is not only convenient to make, but it requires almost no cooking skill! Throw in the ingredients, set it, and walk away. 40 minutes later, you’ll be awarded with flavorful, tender and creamy, but not mushy black beans.
Perfect for your rush hour or lazy last minute weeknight meals.
All the flavors from bacon, bay leaf, onion, garlic, orange along with its juice and zest, kosher salt, and chicken stock match really well with black beans.
We served the black beans 2 ways – in soup and a simple salad with additional orange slices, sprinkled with chopped green onions.
Ok! Time to stock up on dried black beans. Plus, they never really expire.

- 1 pound dried black beans
- 3 strips of bacon, cut into halves
- 1 small onion, cut in half
- 6 garlic cloves, crushed
- 1 orange, cut in half
- 2 bay leaves
- 2 quarts low-sodium chicken stock
- 2 teaspoons kosher salt, more for seasoning
- Press Sauté button
- Add bacon into the pot and sauté for about 2 minutes. This will crisp up the bacon and release its fat
- Add dried black beans, onion, garlic cloves, orange, bay leaves, chicken stock, and kosher salt
- Close the lid and cook at high pressure for 40 minutes + 15 minutes Natural Release
- Remove lid, discard onion, orange, and bay leaves
- Season to taste with salt, then serve!
Too add flavor and texture, we served the black beans with orange slices, green onions, and orange zest.
